What We Ate Wednesday: Scout Dinner Edition

I grew up with an Eagle Scout for a father. Now I have a brother who is also an Eagle Scout. One of my fondest memories from my childhood is the time my mom went out of town and my dad thought it would be cool to cook Scout Dinners in our wood stove. It took FOREVER and things were a little ashy.

Tonight, we had a big group of boys over for "Make Your Own Scout Dinner Night." We had TOO MUCH FUN! We also chose to use our plain old oven instead of a campfire.




What you'll need for your own Scout Dinner:
  • Ground beef (we actually used venison, but regular beef is fine too)
  • Baby carrots
  • Sliced potatoes (the thinner you slice them, the quicker they cook!)
  • Sliced onions
  • Whatever veggies you have laying around (tonight Josh tossed in tomatoes)
Pat the ground beef into a patty (or a bunch of mini-patties...that's what I do) and place in the center of a square of tinfoil. Then, pile the veggies on top, add some salt and pepper, and make a little packet out of the foil. After that, bake in a 350 degree oven for 30 to 45 minutes. Done!
